In this workshop Sean Sleight will discuss the beer brewing process and how it compares to industrial fermentation, why it’s important for a brewery to have a beer lab for quality control, and give some existing and future examples of synthetic biology applications to brew better beer. He will have some samples on hand of beer ingredients for those unfamiliar and will go through specific examples of lab tests for beer, some of which can be highly relevant for biotech applications. We will also discuss the use of a toggle switch to control yeast flocculation, and engineered yeast strains to make beer that tastes like banana and citrusy-smelling valencene.
